The author would love Pigeon Forge, TN. It has every kind of outlet. I thought I'd seen 'em all when I happened upon a billboard advertising a beef jerky outlet. It proudly proclaimed they have 200 kinds of beef jerky. Since I have never tasted meat and never want to, I'll have to imagine the seemingly incredible feelings jerky seems to elicit. Pre-giving up soy, I tried fake jerkee (that's how it was spelled on the package) but it still wasn't something that put me in a Paradise state of mind.
I'll be interested in your experiment with seitan. Something I always advise people to do with dehydrated anything--go light on the seasoning because it concentrates in the drying process.
