Celebrate with vegan recipes
If you’re anything like me, you usually start thinking about what you might make for the Fourth of July about two or three weeks ahead of time, and then a day or two before you are solidifying on paper what you really plan to make. This year I plan on relying on old favorites, plus adding a few new things like grilled corn on the cob and tofu salad spread.
If you’re still in planning mode these last couple of days here are some ideas for what you can make this weekend.
Lavash Crackers with Artichoke and Sundried Tomato Dip
Peanut Butter Chocolate Cheesecake with a Shortbread Crust
Vegan Chocolate Cheesecake with Raspberry Sauce
What have you decided to make or eat on the Fourth of July?

I got some fresh-picked local corn today that is super yummy! Corn and the 4th go together, don’t you think? I ate two ears right there in my office. It’s super raw!!
