I haven&#8217;t ever really been one of them, probably because I was never given too many opportunities to try them. When I finally had a red velvet cupcake several years ago in New York, I was underwhelmed. The flavor wasn&#8217;t very memorable &#8211; mainly it was just pretty. But then I made them myself a few weeks ago, and I got why they were special: chocolate.</p><p>Don&#8217;t mistake me &#8211; red velvet cupcakes don&#8217;t have a very strong chocolate flavor, but you do have a hint of it, which is sometimes all you need. This particular recipe is a winner because the flavor, color and texture is all exactly what you&#8217;d want in a red velvet cupcake. It&#8217;s sweet, mild on the chocolate, the color is a lovely shade of dark red, and moist, plus the cupcake holds together pretty well. The frosting is not very thick, but it complements the cupcake with a creamy, sugary finish. I shared these cupcakes with some friends, none vegan, and they all agreed that they were delicious!</p><p><strong>Vegan Red Velvet Cupcakes</strong><br

/> Yields approximately 12 cupcakes</span></p><p><em>For the Cupcakes:</em></p><ul><li>1 cup vegan milk</li><li>1 teaspoon apple cider vinegar</li><li>1 1/4 cups all-purpose flour</li><li>1 cup vegan granulated sugar</li><li>2 tablespoons cocoa powder</li><li>1/2 teaspoon baking powder</li><li>1/2 teaspoon baking soda</li><li>1/2 teaspoon salt</li><li>1/3 cup canola or vegetable oil</li><li>2 tablespoons vegan red food coloring* or two small bottles of red food coloring</li><li>2 teaspoons <a

I don&#8217;t recommend using this particular red with a lot of frequency &#8211; it&#8217;s really unhealthy, but if you don&#8217;t have any other options, it&#8217;s an okay stand-in. Your natural foods market may carry a vegetable-based food coloring, but as I discovered, it can be extremely expensive (think around $16/box of red, blue and yellow&#8230;and this recipe calls for two small bottles &#8211; ouch). Up to you &#8211; in general, food dyes are not really healthy at all, but if you use them only occasionally, it&#8217;s probably not a big deal.</div></div><p>Preheat oven to 350 degrees Fahrenheit and line muffin pans with liners.</p><p>Whisk together the vegan milk and vinegar and set aside to curdle. Note that I have only used soy milk in this recipe, so I do not know if other vegan milks will thicken in this step.</p><div

href="http://www.glaad.org/spiritday" target="_blank">Today is Spirit Day.</a> I didn&#8217;t realize it until yesterday when I saw a friend post about it on Facebook. I don&#8217;t even think I knew about it until yesterday, but regardless, I was inspired to do this post. A post about blueberries and suicide.</p><p>In a nutshell, today is supposed to be about trying to stop lesbian, gay, bisexual, transgender and questioning kids from killing themselves, and standing up to bullying. You might see a lot of purple t-shirts and sweaters and dresses today. Purple means that you&#8217;re standing in support of LGBTQ youth. I, too, am wearing purple.</p><div

class="wp-caption-text">Spirit Day 2011</p></div><p>But earlier this week, before I knew about Spirit Day, I saw in the news about <a
href="http://news.nationalpost.com/2011/10/17/blog-reveals-sad-final-weeks-before-gay-teens-suicide/" target="_blank">another gay teenager who killed himself</a>. I watched some of his videos (all singing &#8211; and seemingly happy), and I visited his Tumblr site &#8211; full of depression, talking about self-harm, being alone, and many posts tagged with &#8220;suicide&#8221;. The last one had the tag of &#8220;suicide note&#8221;. He said he didn&#8217;t want to wait for it to get better. Three years would be too long.</p><p>You probably remember a few weeks ago <a
href="http://www.huffingtonpost.com/2011/09/20/jamey-rodemeyer-suicide-gay-bullying_n_972023.html" target="_blank">a gay teenager who committed suicide</a>, even after he had made his own <a
href="http://www.itgetsbetter.org/" target="_blank">It Gets Better</a> video. He seemed to be a stable kid, but apparently his classmates egged him on to kill himself until he finally did a few months after making that video. Then they went on to continue bullying his sister.</p><p>Of course, we can&#8217;t forget all the other teens who killed themselves. The kids who felt like they weren&#8217;t loved or worth it. The kids who weren&#8217;t gay, but straight, and who were killing themselves because they felt alone. The kids who were killing themselves despite the efforts they, their families and their schools were making.</p><p>What bothers me in all of this, aside from the caustic and lethal bullying, is that any of these human beings decided that they were not loved enough, either by themselves or anyone else. Well, let me tell you &#8211; as soon as I watch one of these videos or read one of these news stories, all I feel is love. Well, and loss, too. We will never know what brilliant things these people could have done with their lives, rather than having to have society be reactive in their fight against discrimination because someone else was a casualty of a complex and hard world.</p><p>The thing is that teenagers hear us adults railing on about how much we love them, and how difficult things were for us when we were that age, but they don&#8217;t always understand that we really mean it, that we really have been there. I could recite a whole list. All of my education happened at Christian schools, but I was bullied in elementary school and in high school. I&#8217;ve been called a bitch, told that I was ugly and worthless, and had people tell me I was going to hell. I, too, have thought it would be easier to kill myself than to have to deal with the stress of real life, but I think that I never wanted that enough. Life was always more appealing. Still, I have, time and again, felt like no one would understand my situation, whatever I was going through. Yet I&#8217;ve discovered that more than enough people, perhaps too many, understand.</p><p>I&#8217;ve come a long way, a very long way, and so have they.</p><p>I want to share three things that have saved me from my feelings of hopelessness and depression.</p><ul><li><strong>Love.</strong> I finally learned to focus on me, and to be spiritually aware of my place in the Universe. Life is a roller coaster ride no matter what age you are. But I know that I&#8217;m here, awake and alert and conscious, because my life is valuable. No matter what you believe, if you are a Buddhist or Muslim or Christian or atheist, you cannot discount the amazing opportunity you have to make the most of this existence. So I love myself, and most importantly, I give myself permission to accept the love of others.</li><li><strong>My talents.</strong> I don&#8217;t just bake and cook &#8211; I write, I draw, I play with clay. Depression took its toll on me for quite a while, but then I took some art classes and I felt amazing. It was as if I had trapped my creative self deep down and had forced it to stifle, until I was losing oxygen. It was a huge relief to finally allow my imagination to run wild. Some of my pieces have already shown up on Novel Eats. A whole bunch more are soon to make an appearance. It feels good to hold onto &#8211; and show off &#8211; physical manifestations of inner healing.</li><li><strong>Therapy.</strong> For a long time I wanted to work things out on my own, but there came a time not too long ago that I realized that I couldn&#8217;t solve all my challenges by myself. I think that a lot of people believe that they are weak or stupid or shameful if they see a therapist. I am here to tell you that it is okay, more than okay to get help and talk to someone, someone who has seen other people like you or me and helped them become happier and healthier people. I have been seeing a therapist regularly since the beginning of this year and I can tell you that while it isn&#8217;t easy to go to each appointment, I am better for it.</li></ul><p>There are amazing people in my life who I am grateful to have met. I have met and worked with some wonderful gay men who I still consider friends. I recently had the privilege of digging into an apple crisp next to a warm fire with a lovely lesbian couple. One of the people who is most dear to me is a transgender woman. There are also amazing straight people in my life who have struggled, but who are better for the struggle. Mothers, fathers, family members, old friends from college and high school and new friends from the past few months. They are each finding their way, regardless of what has hit them full force in the gut or heart. You can, too.</p><p>So I decided to make blueberry crisp for the people who are considering suicide, whether they are kids, teenagers, adults, gay or straight, bi, trans or questioning. If you are considering suicide, I know that blueberry crisp isn&#8217;t going to change your mind, but I want you to know that people like me do love you. I&#8217;m just a silly food blogger who tries to make things better with some berries, sugar and cinnamon. Sit down, have a bite with me and let&#8217;s be friends, if not in real life, then virtually. Then, as a friend, I&#8217;m going to ask you to please get help, and if that help isn&#8217;t enough, then get more. Get so much help that you finally realize that it&#8217;s okay to stick around until that day that we all die, when we haven&#8217;t planned it, but when the cells in our body and the Universe say it&#8217;s time.</p><ul><li><em>LGBTQ Youth &#8211; If you are considering suicide, please call <a

I love it today for the same reasons why I loved it as a kid &#8211; the egg-hunting (What do vegans hunt? Tofu? Chocolate? Seitan?), the Easter Bunny, the basket of goodies, the pastels, the flowers. Plus it&#8217;s a holiday that always equals springtime to me and I love spring in ways I just don&#8217;t love the other seasons of the year.</p><p>Despite the fact that I don&#8217;t really celebrate like I used to, I still try to acknowledge it through something sweet and delicious. (Remember this <a
title="Vegan Crumb Cake" href="http://www.noveleats.com/breakfast/easter-crumb-cake/">crumb cake</a>? To die for!) This year, I had been thinking I wanted to try to make jam-filled butter cookies. I don&#8217;t normally gravitate towards these kinds of cookies, but I wanted to expand my horizons. I am so glad I did &#8211; these are so super easy and fast to make, delicious and you can make them with most any kind of jam you like. I made these with strawberry jam, but you can make them with raspberry jam (probably best to go with seedless), and I bet orange marmalade would be great, too.</p><p><em>Note: In the first picture in my post you&#8217;ll see cookies made with <a
href="http://www.amazon.com/dp/B002UGMH9Y/?tag=noveat-20" target="_blank">coconut palm sugar</a>, but in the step-by-step photos I am using regular vegan cane sugar. These cookies tasted good both ways, but in my opinion the cane sugar version tasted far better. When using a recipe like this one with so few ingredients, the unique flavor of the coconut palm sugar comes out more and doesn&#8217;t taste quite as good. But feel free to experiment!</em></p><p><strong>Vegan Jam-Filled Butter Cookies<br

class="wp-caption-text">Vegan Irish Soda Bread</p></div><p>There are two things I associate with St. Patrick&#8217;s Day: wearing green and being pinched if you forget to wear green (meanwhile claiming that you <em>are </em>wearing green underwear, so please stop pinching me!). But now that I feel like I am a verifiable amateur home cook, I am now adding a third item to the list &#8211; learning how to cook some new Irish recipes every year in March.</p><p>I don&#8217;t recall ever having Irish soda bread, but I was definitely ready to try it. There are so many variations of this bread, many of which call for eggs, that I wanted to find something that could be veganized without the use of an egg substitute. I was really pleased for two reasons when I came across <a
href="http://allrecipes.com//Recipe/nana-dots-irish-soda-bread/Detail.aspx" target="_blank">Nana Dot&#8217;s Irish Soda Bread Recipe</a> &#8211; first, it had no eggs (yay!) and second, it is a family recipe that comes from Ireland. I love it when I find something that has history and authenticity.</p><p>I was also really curious by the list of ingredients. A lot of the recipes I had run across did include things like raisins, but this was the first I had seen using caraway seeds. The recipe had so many rave reviews, though, that I trusted I&#8217;d probably like it with the added unusual flavor. The end result was most certainly interesting &#8211; very scone-like, not too sweet, and a lot of balanced flavors milling about together. Truthfully it reminded me very much of other European breads I had years ago when studying in Spain, which was a nice thing because it just added to the authenticity of this bread.</p><p><strong>Vegan Irish Soda Bread</strong><br

I&#8217;m often pleasantly surprised when I do this. I discover that I&#8217;ve stretched my skills from one level to another and then another, yet always realizing that I will likely never reach that apex of culinary expertise &#8211; which is a good thing if you ask me. You see, there&#8217;s just always more to learn, to explore, to mine from something as simple as an apple or a pie.</p><p>A few days ago, I came across the idea of making a pie quite differently than I had approached it in the past &#8211; the idea was to use phyllo (or filo) dough instead of the pie dough I am so used to making every year. But I changed my mind. Instead of making the recipe I had discovered, I settled instead on making an apple tart &#8211; something I had never done before, but was only too happy to try. I decided to give myself one teensy break, though &#8211; I&#8217;d use pre-packaged phyllo dough.</p><p>I don&#8217;t normally advocate using ingredients or parts of recipes that you can make yourself, but <a
title="How to make phyllo dough" href="http://www.noveleats.com/challenges/daringbakers/apple-strudel/">I&#8217;ve made phyllo dough once</a>, and let me tell you &#8211; if you&#8217;re not experienced at it, it can take you a goodly amount of time to roll it out. If you ever have the time and the inclination, I&#8217;d heartily recommend you try making it at least once. At the very least, you will come to appreciate the hard effort that goes into making those mysteriously flaky desserts.</p><p><strong>Apple Tart</strong><br

class="wp-caption-text">Easy vegan apple turnovers</p></div><p>Over the last few days I have been thinking about and eating these apple turnovers, and realizing how perfect they are &#8211; and how much like apple pie they taste. Of course, they should. Instead of phyllo dough, these are made with pie crust, and the filling is pretty much the same as apple pie: apples, cinnamon, sugar, a touch of flour and a pinch of salt. It&#8217;s like a portable apple pie, except you probably won&#8217;t make it five feet to your destination before these are done. In fact, you&#8217;ll probably stop and just be in the moment, letting the flavors and textures filter through your mouth. Then you&#8217;ll wish you had another one like I do right now. <em>How </em>I could go for another right this very instant.</p><p><strong>Easy Apple Turnovers<br

style="font-size: x-small;">Makes approximately one dozen apple turnovers</span><strong> </strong></p><p><em>Pastry Crust (for a two-crust pie)<br
/> </em><span
style="font-size: x-small;">This is a revised version of the two-crust recipe from the Betty Crocker cookbook</span><em> </em></p><ul><li>2 cups all-purpose flour</li><li>1 teaspoon salt</li><li>2/3	cup plus 2 tablespoons vegan butter</li><li>4 to 6 tablespoons cold water</li></ul><p><em>Filling</em></p><ul><li>2 medium apples, peeled, cored and chopped or sliced</li><li>Cinnamon</li><li>Sugar</li><li>Flour</li><li>Pinch of salt</li></ul><p>In a large bowl mix together your dry ingredients for the pie crust, then cut in the vegan butter until it is well incorporated.</p><div

class="wp-caption-text">Making the crust</p></div><p>Sprinkle the cold water over the dough one tablespoon at a time, mixing with a fork until the dough begins to cling together and leave the sides of the bowl. If the dough seems too moist just add in a little more flour.</p><div

Cover them individually with plastic wrap, or put them into a plastic bag that can be sealed and place in the refrigerator for about half an hour. This will help to make the crust more flaky, as well as make it easier to roll out.</p><div

class="wp-caption-text">Peeling and cutting apples</p></div><p>Once your apples are chopped or sliced (sliced might actually be easier for making the turnovers), sprinkle them with cinnamon (not too much &#8211; maybe 1/4 teaspoon), sugar, flour and a pinch of salt. You don&#8217;t need much of each &#8211; just use your judgment and remember that you can always add more, but you can&#8217;t take away.</p><p><em>Tip: Note that the purpose of the flour is to help the juices of the apples to thicken as they are released in baking.</em></p><div

class="wp-caption-text">Spicing up the filling</p></div><p>Preheat the oven to 350 degrees Fahrenheit.</p><p>Take one disk of dough out of the refrigerator, and roll it out. You may roll it out into a rectangle then cut equal-sized large squares or you can use a very large round biscuit or cookie cutter to cut each piece.</p><div

class="wp-caption-text">I used a large round cookie cutter - the largest I have</p></div><p>Place a few apples on top of each piece of dough, then fold it over. If it cannot easily seal, you may need to remove some of the apples.</p><p>Press the edges together, and fold over and press (this will help to avoid the apple liquid from leaking out and sticking to your pan &#8211; although some will still invariably leak). Score the top of each turnover with a knife to allow the steam from the apples to escape during baking. Place each on a cookie sheet.</p><div

What I love most about Halloween is the creativity and creepiness of the recipes &#8211; tombstone cookies, <a

It&#8217;s probably the holiday where the cook or baker has the most creative license to make something utterly horrifying and delicious at the same time.</p><p>This year I could not figure out what I wanted to make, but I finally settled on a recipe that I felt would be easy for not just me to make, but for you as well. I decided to make witches fingers &#8211; firm, yet melt in your mouth cookies. I knew I had a real winner of a recipe on my hands when, as I was finishing up the last cookies and putting them on the cookie sheet, my husband declared (gleefully) that they looked disgusting and realistic. Perfect!</p><p><strong>Witches Fingers<br

This will make the dough easier to handle when you are shaping the witches fingers.</p><p>Just before you take the dough out of the refrigerator, preheat your oven to 325 degrees Fahrenheit. Lightly grease baking sheets, or use silicone baking mats.</p><p>Remove the dough from your refrigerator, and using a teaspoon or tablespoon scoop a heaping spoonful onto a piece of wax paper.</p><p><em>Tip: If you use a teaspoon you will get about 60 cookies; if you use a tablespoon you will get about 30 cookies.</em></p><div

I have been craving brownies lately, so I decided to try making orange chocolate brownies. The recipe I based the brownies off of is a basic one, so I really was testing out the use of orange in it. The brownies turned out great, but I will say that they are not solid brownies &#8211; they fall apart easily &#8211; so this recipe is better used where the brownies are a topping to your <a
href="http://www.noveleats.com/dessert/coconut-ice-cream/">vegan ice cream</a> (a suggestion my husband had after trying one).</p><p><strong>Orange Chocolate Brownies</strong><br

You&#8217;ll want to try to mix it very well, because if you let the flax mixture sit for too long it may not incorporate very well. To be honest, I was very tempted to toss this into the food processor, but I decided not to. That definitely would have made this part of the batter smoother.</p><div

The orange flavor was definitely present, but it was not overwhelming, and the brownies tasted really quite decadent.</p><p>There are two things, though. These were very greasy &#8211; I might cut the amount of butter down by a few tablespoons next time, and to make them a little more solid I might increase the flour a little bit. The key is to not make them cake-like. The point of brownies is to have something that is a lot more moist and dense than cake, so perhaps my next experiment will be to try to find that happy balance.</p><div

I decided it was high time to make scones again the other day, and I&#8217;m glad I did &#8211; although I wish I hadn&#8217;t eaten them all already. I could so go for another right now!</p><p><strong>Orange Scones</strong><br

href="http://veganyumyum.com/2008/03/lemon-maple-scones-with-vegan-clotted-cream/" target="_blank">vegan clotted cream</a> as a topping or they are delicious on their own.</p><p>Also, while I am not a huge fan of cranberries, I do think that these would taste really nice with some cranberries and/or some slivered almonds mixed in. Or instead of orange zest and juice, consider lemon zest and juice. Be creative &#8211; you&#8217;re sure to come up with some really fantastic variations.</p><div

It was flavorful and moist, and ever since then I have thought off and on that I should try and make it.</p><p>As I was trying to decide what to make yesterday, I realized that I had everything I needed to make Mexican cornbread. This recipe doesn&#8217;t contain cheese (of course), but we tried it with some vegan butter and nutritional yeast sprinkled on top and it added a nice extra saltiness and savory flavor.</p><p><strong>Mexican Cornbread</strong></p><ul><li>1 1/2 cups cornmeal</li><li>2 1/2 cups vegan milk</li><li>2 cups all-purpose flour</li><li>1 tablespoon baking powder</li><li>1 teaspoon salt</li><li>1/2 cup plus 3 tablespoons sugar</li><li>Egg replacer for two eggs (if using flax, mix together 2 tablespoons ground flax seed and 6 tablespoons hot water)</li><li>1/2 cup vegetable oil</li><li>1/2 or 1 onion, chopped</li><li>2 jalapeños, stemmed, seeds removed and chopped (if using sliced jalapeños from a jar, measure out about 1/8 cup)</li><li>Corn, optional</li><li>Sweet pepper, chopped, optional</li></ul><p>Preheat your oven to 400 degrees Fahrenheit. Grease a 9&#215;13-inch baking pan. If you are using a smaller pan like I did (I used an 8&#215;11-inch pan), you may want to preheat to 350 or 375 degrees Fahrenheit, because it will take longer to bake and you don&#8217;t want the bread to burn.</p><p>In a small bowl, combine the cornmeal and vegan milk. Make sure to mix it well so there are few or no lumps left. Set aside.</p><div

Insert a knife or toothpick in the middle and if it comes out clean then take it out of the oven. Because of the size of my pan I baked probably a total of 55 minutes, with the last 20 minutes at 350 degrees Fahrenheit.</p><div

Because of the level of moisture it had to be eaten with a fork. Still, it was flavorful and delicious, especially with some vegan butter spread on it.
