10 Vegan Summer Recipes

A few of my favorite summer recipes

I’m still getting used to the weather in Washington. I have spent virtually every summer of my life in locations where the summers are hot and often humid, and where the springs usually get a jump start on the hot weather and say “first!” But yesterday, I was quite surprised when I looked at the calendar and saw “First Day of Summer”. The temperature was 62 degrees, and it was cloudy. Our June has been almost relentlessly cool with a lot of rain, so it just doesn’t feel like summer. But then, here we are, a day later and the weather is beautiful and in the 70s. Blue skies, a few fluffy white clouds and birds chirping. Today is summer.

When I realized it was summer, my mind – as always – turned to food. I decided to ask my fans on Facebook what summer foods they think of, and I got some pretty tasty responses – stone fruit like cherries and peaches, barbecue foods, and spicy cold soup like gazpacho. Here are a few of my own favorite summer recipes that I’ve made over the last few years.

My very favorite is a good sweet juicy watermelon. My recipe for it is to wash it thoroughly, cut it up, MAYBE put on a sprinkle of salt (not required for a really luscious one) and eat!
